Giant groupers (龙趸, lóng, dÇ”n) are highly praised by affluent Hong Kongers, known to be among the best connoisseurs of seafood.

 

These esteemed fish are commonly used in Cantonese seafood restaurants for their high-quality, firm, and bouncy flesh, which is rich in collagen.

 

The chewy skin of the giant grouper makes it a delicacy that diners can't get enough of. Remarkably, giant groupers can grow up to 3 meters in length and weigh several hundred kilograms, making them one of the largest species of grouper.

Ah Hwee has spent the last 20 years mastering the rearing and distribution of this premium fish. His expertise extends to every aspect of giant grouper farming, including the meticulous process of sunning the nets, a practice that has been readily adopted by his team. This level of attention to detail ensures that our fish are raised in the best possible conditions, contributing to their superior quality.

For nearly 20 years, we have been at the forefront of giant grouper production and distribution, delivering between 100 and 200 tonnes of premium-quality giant groupers annually to esteemed markets in Hong Kong and China.

 

Our operations are rooted in our own fish farm located in Changi, Singapore, where we have cultivated a reputation for excellence and sustainability.

Our comprehensive operations are spearheaded by a dedicated team of experts. At the heart of our production capabilities is our extensive central kitchen, managed by the highly skilled Ah Hwee.

 

On the front lines of our food and beverage operations is Mr. Kenny Cheong, who ensures that our premium seafood reaches consumers in its finest form.

Our commitment to quality is exemplified in our farm-to-table approach. We meticulously grow our giant groupers from broodstock to full maturity on our expansive 1-hectare fish farm. This process allows us to maintain stringent quality controls and ensure the highest standards of freshness and taste.
